In 2006 the region of The Lake of Garda was officially nominated
as “Zona Carne Salda” from the initiative “Strade dei vini e dei sapori” in
Trentino. Carne Salada is one of the most traditional dishes from the upper Lake
of Garda. This dish is made of beef, selected herbs and spices and is cured in
brine. It is served similarly to Carpaccio or grilled, boiled or smoked in the
oven, then served with brown beans that have been prepared in extra virgin olive
oil.
